As a Thai, I would like to add just one thing to the sixth type of noodles you mentioned about.  I hope it's ok.:)  &lt;br /&gt;
&lt;br /&gt;
Although Kanom Jeen looks like noodles, Thais categorize them as another dish (not noodle dish) because we eat them with different sauces.  We also can only find them at Kanom Jeen vendors; not at noodle stores.&lt;br /&gt;
&lt;br /&gt;
The most common sauces served with Kanom jeen are Nam-ya, Nam-priik, Gang Keaw-waan and Gang Tai-pla.  All these sauces are spicy, while Nam-priik is the least spicy sauce.   &lt;br /&gt;
